30 min meal! Cauliflower “couscous” and Coriander Salmon stew

I been experimenting this week and this meal is SO good if I must say so myself. Packed with flavor but only takes about 30min to make. If you follow me on Instagram you’ll se my Friday find this week was Garden Nature pre minced cilantro…. I use it in the recipe since I wanted a break from all the chopping but feel free to use fresh cilantro. However, the healthy highlight of the recipe is the cauliflower couscous! So good and look out for different variations in the future because it makes a great rice substitute.

Now let’s get to the recipe!

Coriander salmon stew
Ingredients
16 oz salmon
1 tbsp tomato paste
1 Tbsp coriander
1/2 Tbsp cumin
1 Maggie cube ( or a if you don’t have use a bouillon cube)
1 Tbsp “Garden Nature” pre minced cilantro ( or use 1/4 cup minced fresh cilantro)
1 tbsp olive oil
Cayenne pepper to taste
1/2 onion
1/2 red pepper
3/4 cup water

Directions
1. Heat olive oil in pan on medium heat
2. Cook onions and red pepper with seasonings and cube until translucent
3. Add tomato paste
4. Add salmon and quickly “brown” each side
5. Add water
6. Once the stew comes to a boil lower the heat and cover
7. Let simmer for 10 or until cooked
8. Turn flame off the stove and add cilantro into the stew

Ready!

Serves 4

235 calories, 3.3g carbs, 21.5 g protien, 2.5g saturated fat

Cauliflower “couscous”
Ingredients
1 cauliflower head
1/4 pine nuts
2 tbsp olive oil
2 cloves minced garlic
Salt and pepper to taste

Directions
1. Remove cauliflower florets from the stem and in a food processor pulse the florets until they are “rice-like”
2. * make sure the cauliflower is dry before cooking* you can prep this earlier or dry the florets as best you can BEFORE putting into the food processor.
3. Heat olive oil in pan
4. Sauté all ingredients in pan for 3-5 minutes.

Serves 3

143 cal, 6.2 carbs, 3.8 g protein, 1.9 g saturated fat
