Spicy Eggplant Chips







2 eggplant=2 eggplant posts.  These eggplant chips will make an eggplant hater a believer.  These quick and easy eggplant chips are good to snack on but also a great addition to your salad for extra flavor or as a meat substitute.  I can’t get enough of them!  Here is the recipe…


1 Tbsp Cumin

1 Tbsp grated parmesan cheese

1 Tbsp Olive oil

1 large eggplant (or two small eggplant)

1/2 tsp sea salt

1/2 tsp cayenne pepper

1/4 tsp black pepper



1.  Slice eggplant in thin dials or you can slice into “sticks” similar to French fries

2.  In a bowl mix and coat eggplant with all other ingredients

3.  Spray baking sheet GENEROUSLY with cooking spray before placing eggplant in a single layer, and spray tops of eggplant when done.

4. Bake eggplant at 425 degrees for 15 minutes on each side or until dark brown/crisp.
